I`m going to write about french crepe.
The word "Crepe" is french origin, that mean crimped. It is reference to a texture of a dough after fried in frying pan or metal plate, always greased with butter.
Originally this food was made on metal plate. The sweet recipe contain whole wheat flour, eggs, milk, water, sugar and vanilla. The salt recipe, also called "galette" contain buckwheat, water and salt.
There are superstitions originate in the Middle Age, for example: each guest prepare own crepe doing a wish before throw crepe to air. If it fall open and on the right side, the wish will be attended immediatilly. Otherwise, it can be made again in next winter.
Brittany is the place where the crepe is widespread, in some regions of France only Britons, born in peninsule north west of the country can do the plate. In this little place of France, the crepe is consumided whole year, accompained by cup of Cidre and apple-based drink.
The dough is spread onto very hot surface for 30 to 60 seconds of each side. Then spread the filling onto half dough, close the other half and after fold the crepe in half.
It`s delicious.
